Many European sausages contain filler material. Barley or buckwheat grains are added to Polish black pudding, and white pudding usually contains rice. In England, oatmeal, biscuits and breadcrumbs are often included. In Asia, rice is often added to normal and fermented sausages, as rice ferments quite well.

Swedish sausages are known to contain potatoes and are simply delicious. Grilled sausage served with potatoes tastes great, so why not combine both, meat and potato, and stuff them into a tripe. Swedish potato sausage is a classic sausage. This means that it has a well-defined character that differentiates it from others. Very often people let their imagination run wild and mix meat with ingredients like apples, raisins, pineapples and others and think they have created a masterpiece. They actually just created another version of a simple sausage and it is doubtful that others would like such an invention.

The Swedish potato sausage is liked by everyone and it is very simple to make. It is a fresh sausage, this means that it must be refrigerated and fully cooked before serving. It can be cooked after filling and will turn into a ready-to-eat sausage, but it still needs to be refrigerated.

Prescription

Materials:

400 g pork, 0.88 pounds
beef 300 g, 0.66 pounds
potatoes 300 g, 0.66 pounds

Ingredients per 1000 g (1 kg, 2.2 lb) of meat:

salt 20 g, 3 tsp.
white pepper 4.0 g, 2 tsp.
allspice, ground 2.0 g, 1 tsp.
small onion, 30 g, 2 tbsp.
water 125 ml, ½ cup

Instructions:

1. Grind the meats, boiled potatoes, and onions in a 3/8-inch plate.
2. Mix water with salt, pepper and allspice and mix well.
3. Stuff into 36 mm casings.
4. The sausage can be fried, baked or boiled. You can place it in a pan with water to cover it, bring it to a boil and then simmer for about 20 minutes.
5. Store in the refrigerator.
6. Cook before serving.

Grades:

Sausage can be made from raw or boiled potatoes. However, it is best to use boiled potatoes as the sausage may not cook as well as raw potatoes require. Also, if the sausage is not cooked immediately, the raw potatoes turn dark and gray, discoloring the sausage.
